Since it’s fallen below 60 degrees a few times in Los Angeles, it’s officially considered cold and therefore, it’s definitely soup weather. As a dietitian there’s an underlying obligation to want to create healthy meals at every opportunity but guess what? Even health professionals are human so as much as I want to eat those healthy meals (and snacks), I just don’t enjoy cooking them.
I always thought that if I had more time and more space I’d enjoy cooking more but I have not yet embraced a love of cooking. However, since I still do love eating and efficiency, the slow cooker has become one of my very best friends and this cookbook couldn’t have come at a more perfect time:
Holidays + School Vacation + Visiting Relatives = lack of time ——————-> many nights out, stress and poorly planned meals.
Even though I don’t cook much, I do love cookbooks and the quality of Slow Cooker Soups and Stews didn’t disappoint. The book has gorgeous photography, fonts that are easy to read, simple cooking instructions, servings per recipe and nutritional information per serving size. This was not an intimidating cookbook and I was excited to try out one of the recipes that caught my eye, Buffalo Chicken Soup.
Buffalo is where Jay went to law school so I figured this recipe would be a treat for him and since Wild Boy loves the taste of blue cheese (no kidding) I figured this would be a perfect trial recipe. Since Buffalo Chicken Soup is an exclusive recipe to Slow Cooker Soups and Stews, I can’t reveal all of the ingredients and details of the recipe (all details are available in the book though) in this post. However, I will say that this one of the quickest and tastiest dishes I’ve ever prepared.
From ingredient prep to ready to cook took only 16 minutes! The only reason it took as long as it did because I needed to cube frozen chicken.
Tip: Frozen chicken is fine to use in crockpot recipes but if you don’t want the hassle of handling and chopping frozen poultry, defrost it the night before in the refrigerator.
This is definitely a recipe you can make before work or school and have it ready at dinner time with minimal fuss. It went from above to this after 7 hours:
This was a big hit in my house! It was a little spicy for Wild Boy but I’m certain I can temper it the next time I make it. There are already a few recipes I plan to make over the Winter Break to make 2 full weeks of vacation a little bit easier!

I love my slow cooker! I just liked the FB page. I use it all the time in the winter. Recently I made slow cooker pork tacos and they were so yum. Buffalo chicken soup looks amazing!

Mmmmm the soup looks delicious! I have a slow cooker, but rarely bring it out. I made a chicken marsala type of recipe once and it was great!

One of my favorite simple meals is a pork tenderloin spritzed with a bit of olive oil and rubbed with garlic and rosemary.
Oh YES! I love making meals in my crockpot this time of year. I “liked” it on FB and my go-to meal is Turkey Sausage Sweet Potato Stew. It’s the perfect post-run meal – YUM-O!!!
Ok, you’re entered B. I love the idea of a slow cooker but since I don’t eat beef and pork sometimes it feel limiting. I loved this new cookbook because it had variety.

With a commute like yours the prep time to use a slowcooker takes some doing. I will say that the Buffalo Chicken Soup didn’t take a lot of prep. If you like Buffalo wings, this is a must try.
